This Pea & Goat Cheese Crostini is a fresh, creamy, and perfectly balanced snack or breakfast that’s ideal anytime!
Ingredients
(Serves 4-6)
For the Pea & Goat Cheese Topping
1 cup fresh or frozen peas, blanched
1/2 cup goat cheese, softened
1 tablespoon extra virgin olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
1/4 teaspoon Himalayan sea salt
1/4 teaspoon black pepper
2 tablespoon fresh mint chopped
For the Crostini
6-8 slices rustic sourdough or gluten-free bread
1 tablespoon olive oil (for brushing)
1 garlic clove, halved (optional, for rubbing)
For Garnish (Optional)
Extra peas, for texture
Microgreens or extra fresh herbs
A drizzle of honey or balsamic glaze for sweetness
A pinch of chili flakes for heat
Instructions
1: Prepare the Pea & Goat Cheese Mixture: If using frozen peas, blanch them in boiling water for 2 minutes, then drain and rinse with cold water to maintain colour. In a bowl, mash the peas with a fork or pulse in a food processor for a slightly chunky texture. Stir in goat cheese, olive oil, lemon zest, lemon juice, salt, pepper, and fresh mint/basil.
2: Prepare the Crostini: Preheat the oven to 375°F (190°C). Brush both sides of the bread slices with olive oil. Arrange them on a baking sheet and toast for 8-10 minutes, flipping halfway until golden and crisp.
Optional: Rub warm crostini with a halved garlic clove for extra flavour.
3: Assemble & Serve: Spread the pea and goat cheese mixture over the toasted bread. Garnish with extra peas, microgreens, or a drizzle of honey/balsamic glaze.
