Ingredients
For the Salad
4 cups baby spinach
2 ripe persimmons, thinly sliced (Fuyu variety recommended)
1/4 cup pomegranate seeds
1/2 cup feta cheese, crumbled
1/4 cup toasted pecans or walnuts (for crunch)
1/4 small red onion, thinly sliced
For the Dressing
2 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
1 teaspoon organic honey (or maple syrup for a vegan option)
