Ingredients

For the Salad

  • 4 cups baby spinach

  • 2 ripe persimmons, thinly sliced (Fuyu variety recommended)

  • 1/4 cup pomegranate seeds

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup toasted pecans or walnuts (for crunch)

  • 1/4 small red onion, thinly sliced

For the Dressing

  • 2 tablespoons fresh orange juice

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon organic honey (or maple syrup for a vegan option)

  • 2 tablespoons extra virgin olive oil

  • 1/4 teaspoon Himalayan sea salt
