Ginger Soda
This homemade ginger soda is crisp, slightly spicy, and naturally refreshing, made with fresh ginger, a touch of honey (or maple syrup), and bubbly mineral water for extra hydration and minerals.

Ingredients
(Serves 1)
1-inch piece fresh ginger, peeled and grated
1 cup water
1 tablespoon (as needed) organic honey to taste (or organic maple syrup for a vegan option)
1 tablespoon fresh lime or lemon juice
1 teaspoon apple cider vinegar w/ the mother (or more for extra gut health benefits)
1 cup mineral water chilled
Ice cubes, for serving
Fresh mint or lime slices, for garnish
Instructions
Make the Ginger Syrup
In a small saucepan, bring 1 cup of water to a simmer.
Add the grated ginger and let it steep for 5-7 minutes. The longer you steep the more intense the flavour.
Strain out the ginger and stir in the honey (or maple syrup) while the mixture is still warm. Let it cool.
Assemble the Drink
Fill a glass with ice cubes.
Add 2-3 tablespoons of the ginger syrup, then stir in the lime juice and apple cider vinegar.
Top with mineral water and give it a gentle stir.
Garnish & Serve
Garnish with fresh mint and a lime slice for extra freshness.

Variations & Additions
Add Fresh Turmeric: Add to the Ginger Syrup- 1-inch fresh turmeric, peeled and grated (or ½ teaspoon ground turmeric) with Pinch of black pepper (helps with turmeric absorption).
