Winter Beet Salad with Citrus, Pecans & Pomegranate

This Winter Beet Salad is everything I love in a dish—vibrant, fresh, and full of flavour!

The earthy beets balance perfectly with the bright citrus and toasty pecans, while the pomegranate seeds add that little pop of freshness.

It’s nutrient-packed, loaded with antioxidants, and just the right mix of sweet, tangy, and crunchy—perfect as a side or a light meal.

This Winter Beet Salad is a perfect balance of sweet, tangy, and savoury flavours, bringing together colour, crunch, and nourishment in every bite.


Ingredients

For the Salad

  • 3 medium beets, roasted, peeled, and sliced

  • 1 orange (or blood orange), peeled and segmented

  • 1/2 cup pecans, toasted and roughly chopped

  • 1/4 cup goat cheese (or feta), crumbled

  • 2 cups arugula or mixed greens

  • 1/4 small red onion, thinly sliced

  • 1/4 cup pomegranate seeds

For the Dressing

  • 3 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey (or maple syrup for a vegan option)

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper


Instructions

  1. Roast the Beets

    • Preheat the oven to 400°F (200°C).

    • Wrap each beet in foil and place them on a baking sheet. Roast for 40-50 minutes until fork-tender.

    • Let cool, then peel and slice into thin rounds or wedges.

  2. Prepare the Dressing

    • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.

  3. Assemble the Salad

    • Arrange the arugula or mixed greens on a serving plate.

    • Top with sliced beets, orange segments, red onion, pecans, and pomegranate seeds.

    • Sprinkle with goat cheese.

  4. Drizzle & Serve

    • Drizzle the salad with the honey-balsamic dressing just before serving.

    • Toss gently and enjoy!
